Goat Cheese & Beet Salad with Strawberry Balsamic Jam Vinaigrette

Peppery arugula, sweet roasted beets, creamy goat cheese, and a bright jam vinaigrette. Serve it alongside a steak or let it be the star of lunch.

Ingredients

  • Fresh arugula or your favorite salad greens
  • Roasted beets, peeled and sliced
  • Crumbled goat cheese
  • Pickled red onions
  • Candied pecans or pistachios

For the vinaigrette

Make the bowl as generous as you like. This is a flexible recipe, with no fixed quantities or serving count.

Make it

  1. Roast the beets at 400°F until fork-tender, about an hour depending on their size. Cool, then peel and slice.
  2. Whisk together equal parts jam and balsamic vinegar. Slowly whisk in olive oil until the vinaigrette is smooth and balanced to your taste.
  3. Lightly dress the arugula. Add the beets, goat cheese, pickled red onions, and candied nuts. Finish with a little more vinaigrette and serve.

Our original Highlight used candied pistachios and an herb goat cheese. The latest Jam Session also suggests candied pecans.

“Spoonful” is the original story’s measurement. The story does not specify a salmon weight or number of servings.

  2. Mix the jam, brown sugar, Dijon, dill, garlic powder, lemon juice, salt, and pepper into a glaze.
  3. Place the salmon in a baking dish with the lemon slices and spread the glaze over the fish.

Finger Lime Marmalade Rack of Lamb

Finger Lime Marmalade, Dijon, garlic, and herbs make a bright glaze for a roasted rack of lamb.

Our roasted rack of lamb with a Finger Lime Marmalade glaze

Ingredients

  • A rack of lamb
  • Finger Lime Marmalade
  • Dijon mustard
  • Fresh garlic
  • Salt and pepper
  • Herbs of your choice
  • Optional: red pepper flakes or hot honey

The original recipe uses amounts to taste; it does not specify a rack weight or fixed glaze quantities.

Make it

  1. Mix the marmalade, Dijon, garlic, salt, pepper, and herbs. Add red pepper flakes or hot honey if you like.
  2. Set aside half the glaze in a clean bowl before the remaining glaze touches the raw lamb. Coat the lamb with the other half; keep refrigerated while marinating.
  3. Heat the oven to 450°F. Roast the lamb for 10–15 minutes.
  4. Brush with the reserved glaze, then roast for about 20 minutes more, or until the thickest part reaches at least 145°F. Timing depends on the size of your rack.
  5. Rest for at least 3 minutes before slicing.
